While the industry standard is our professional R-C-R (Resting-Compounding-Resting) process, this custom project introduces the R-C-C-C-R sequence—a triple-lamination workflow designed to replicate the “3-kneading, 3-resting” artisan method at a massive scale of 550 kg/h.

The R-C-C-C-R Logic: Triple Compounding for a 100+-Layer Matrix

The “Extra-C” in this line represents a commitment to protein architecture. By compounding the dough three times, we build a 100+ layer gluten matrix that delivers a level of chewiness and boiling stability unmatched by standard machines.

Phase 1: R1 (Hydration & Initial Resting)

The process begins in our 125 kg Conventional Dough Mixer. The dough is discharged into containers for a dedicated R1 resting stage, ensuring every flour particle is fully hydrated before entering the rollers.

Phase 2: C1 (Dual-Parallel Sheeting & First Combination)

This custom line features two parallel roller groups working in tandem.

  • The Process: Two independent dough sheets are formed and immediately merged by a third roller set. This C1 stage (2-into-1 combination) creates the first dense layering of the Gluten Network.

Phase 3: C2 & C3 (Continuous Dual-Lamination)

This is where the customization reaches its peak. The dough sheet passes through two more independent lamination stages (Stages 4 and 5).

  • Triple Compounding: By the time the dough leaves Phase 3, it has undergone three distinct compounding cycles (C1 + C2 + C3). This triple-folding creates over 100 microscopic layers, mimicking the intensive manual kneading that defines world-class noodles.

Phase 4: R2 (Intermediate Stress Relaxation)

After the triple-lamination, the sheet enters the R2 resting stage on a specialized rack. This allows the internal tension of the 100+ layers to relax, ensuring the dough remains supple for the final reduction.

Phase 5: 30% Gradual Reduction

The stabilized sheet enters the final four roller stages, adhering to the 30% Gradual Reduction Rule. We move from it down to target thickness, ensuring the complex internal structure is preserved without mechanical trauma. In this case, thickness sequence: 10mm → 7.5mm → 5.5mm → 4.2mm → 3.4mm → 2.4mm → 1.8mm → 1.5mm → 1.2mm.

Phase 6: Packaging Flexibility

  • Current setup: Manual collection into plastic baskets for delivery.
  • Optional upgrade: The line can be connected directly to VFFS orpillow-type packaging machines for automatic bagging, if required.
