1. Pre-Cooking: Structure Defines Texture

Before the noodles even touch the water, their “Al Dente” potential is determined by the manufacturing process.

Step 1: The Critical Water-to-Noodle Ratio

  • The Requirement: You must use high-capacity boilers. When noodles (especially chilled or frozen) are added, a small volume of water will suffer a rapid temperature drop. This ruins the starch structure and leads to a “mushy” exterior.
